What fish would you recommend? Whatever's the best price and the best quality or alternatively a fish not usually bought because of availability or price.
Do we pre-order fresh fish? Yes, it would be a good idea for quantity and for particular types of fish. If you only want 2-3 kg of fillets, we usually have different types on hand
Where does most of the fresh fish come from? Most of the fish comes from South east trawl. (From Sydney to Kangaroo Island) The major parts being Portland, Lakes Entrance and Eden. But with the cutting of fishing quotas there has been a bigger reliance on NZ fish. Species such as School Shark, Ling, Flounder, Snapper, Blue Eye, and Orange Roughy are now mainly NZ.
Where does most of the frozen seafood come from? Nearly all frozen seafood is imported apart from whole cooked and green prawns, squid tubes, Calamari, Large octopus, Bugs, Lobsters. Most of the imported green prawn cutlets and prawn meat come from Vietnam, Thailand, India and Indonesia. With the Thai being the premium quality but also premium price. Also the Thai (mainly Kingfisher brand) has very good quality shrimp, octopus and Marinara. Fish fillets come from everywhere.
What's the difference between fresh and frozen seafood.? Basically quality. However prawns hold their flavour a lot better than what fish does.
Can you get live Lobsters? Yes depending on time of year. South Australian(part of) starts October 1st and the rest of South Aust starts October 15. Victoria & Tasmania start on November 15th. I can still get live lobsters till May. With bigger lobsters more predominant after Christmas.
